Being Cheesy
Moon River is being honored with our very own organic cheese from the award winning Moon Shine Dairy Farms in Mullingar, Ireland!
Our cousins in Mullingar who own and operate the very successful organic farm as well as Lake Shore Bed and Breakfast were thrilled to hear the name of the agency and decided to name their newest hard cheese with herbs, "Moon River." They also have a stock bull called Moon Raker and produce a smoothie named Moon Shine!
We are going to Ireland this August to visit and can't wait to see them all once again and taste what is sure to be a very delicious, wholesome Moon River organic cheese!
Sometimes things happen which are so serendipitous that you can't help but smile from ear to ear. What a magical existence it is!
" All of our grasslands are rich in clover and so many herbs that it gives a truly lush, soft and floral flavour to the milk and this contributes to the rich texture and flavour of these artisan farmhouse products. All herbs and rennet used in our cheese making are organic and vegetarian. Our products are free from any preservatives and artificial colours of any kind.....just pure fresh organic milk.
At this point, we should mention that any planting and processing work on the farm is guided by the moons cycles, i.e. any growing of vegetables, reseeding, harvesting, and also cheese making. It is for this reason that we call our farm, Moon Shine Dairy Farm."
